Type: Dry, white wine
Grape varieties: Malagousia, Assyrtiko & Chardonnay
Origin: From selected sub-mountainous vineyards in the area “Ai-Giorgis” in the southern outskirts of Mount Knimis, part of the privately owned vineyard of Domaine Hatzimichalis in Atalanti Valley.
Vinification: White vinification method under controlled temperature. The wine matures for 6 months in French oak barriques (228lt) and then for 6 months in the bottle, in the underground cellars of Domaine Hatzimichalis, so that it can be referred to as ‘Cava’.
Alcoholic strength: 13,5% Vol
Ageing potential: Ready to drink but will continue evolving during the next five years.
Tasting notes:Clear, bright golden color. Complex bouquet with distinguish aromas of glazed fruits, roasted nuts and vanilla aromas on a discreet oaky background. Round in the mouth with hues of sweet spices and ripe white flesh fruits. Its richness and greasiness are balanced by the high acidity and leads to a full long aftertaste.
Food pairings – Serving temperature: Tenderloin cooked on vines and paella are its fine accompanies. You can also combine it with fatty fish and pasta or poultry with buttery sauces. Best served at 10-12 °C.
