The vineyard
The Monte Solane vineyard is located 650 metres above sea level in a south-easterly direction with a compact, skeletal soil.
The grapes
Corvina gentile and Corvina Grossa.
The winemaking
At the end of the pressing and following fermentation, the wine starts a 20 months tertiary complexation and refiniment which improves the balance and the aromatic profile.
The wine
A dark and brilliant ruby red colour with an intense aroma reminiscent of ripe red fruits, black pepper, tobacco and cocoa, with a pleasant note of balsamic vinegar and just a hint of Mediterranean herbs. A warm and well-balanced palate with a clean and dry finish.
Food pairing
Mature cheeses; succulent cured meats such as “Soppressa Veneta” (a particular Venetian salami); risotto; red and generally heavier meats; braised meats; game; also suitable to be served with aromatic fish dishes such as risotto with shellfish.
